Spaghetti | 200g |
Pancetta or bacon | 100g |
Eggs | 2 large |
Parmesan cheese | 50g, grated |
Salt & pepper | to taste |
Cook spaghetti in salted boiling water until al dente. Drain, reserving some pasta water.
Fry pancetta or bacon in a pan until crispy. Set aside.
Beat the eggs in a bowl, add grated Parmesan, and mix well.
Combine the hot pasta, pancetta, and egg mixture. Stir quickly to coat the pasta (off heat).
